About
The sourdough ferments for three days on a starter we have kept alive since 2011, which is why it keeps for a week and why people with mild wheat sensitivity often tell us they can eat it. We bake a fixed number each morning. Reserving is free and is the only reliable way to get a loaf after ten o'clock on a Saturday.

No, and we would rather say so plainly — we mill and bake wheat all day and could not honestly promise a safe product for coeliac customers.
